Cauliflower Rice

This post is primarily for my sister and Mom but it's yummy for anyone who wants to add more veggies to their diet.





First cut up a head of cauliflower in to florets and put in a food processor. It should not be packed in but loosely.

Turn on food processor until cauliflower resembles broken pieces of rice.

Heat a good amount of oil in a skillet at medium heat. It should be enough to generously coat the entire pan.

I tilted it to the side to show you how much was in there.
Add processed cauliflower into oiled skillet. Season as desired. I use salt & pepper primarily. Cook over medium heat for 10 minutes stirring periodically.

After cooking 10 minutes taste it. Everyone has their own taste of doneness. It does tend to dull in color. Once done add green onions, parsley or cilantro for a little extra flavor.


Cookies with Santa

Last night we took the kids to cookies with Santa at a local toy store. The Santa was fantastic. He was so good with the kids and made a point to talk to each of them.






Accomplishment

At the beginning of April I participated in my first 5k. It was called the Mule Kick which coinsides with Mule Day.  Completing this was a great accomplishment for me. My official time was 53:26.

Since this was my first race I found the little timer trackers amusing. My foot is on the left & Lisa's is on the right.

Even though I was tired and sore, I still went to the Mule Day Parade with my favorite people, my kids. Here's a pic of me and the girls.




I'm Back!

I totally miss my blog and having a creative outlet. Seems like life just got kicked into overdrive this year with all 3 of my kids finally in school and other activities. Now that the school year is coming to a close and I have a little more mental clarity I want to get back to some things I enjoy, like writing in my blog.

Southern Fried & Baby Cows

About two weeks ago we had our annual Southern Fried Festival. I talked about it last year here.

So on Friday night I took the kids down while Philip was brewing beer. By far the kids favorite thing was the petting zoo.

Ashton especially liked the chicken.



On Saturday I wanted to go watch the cooking competition and Carley decided she wanted to come with me and afterwards she talked me into going back to the petting zoo. And they had something new, a baby cow.



OMG, that was the cutest and sweetest thing I've ever seen. I had to actually get in there to touch it and it was so soft and loving. I wanted one in that moment but I do realize they grow up into big cows.

Carley was so smitten with that cow. She sat there and petted and brushed it for a long time. And then the baby go up and Carley continued to follow it and brush it.


I think she would have taken it home if I'd have let her.

Good Times

Last week was me and Philip's 10th wedding anniversary. We, meaning I, wanted to do more than just dinner and a movie so I made Philip make arrangements for a trip.

We, meaning he, decided to spend the night in Nashville and do dinner and something else. Well that something else turned out to be something we've both wanted to do for a very long time. We got tickets to see one of our favorite comedians, Christopher Titus. This was my first time going to any comedy show and he definitely did not disappoint. We waited in line after the show, bought a video and got his signature and photo.


Then we waited an obscene amount of time for a cab that never came. We finally hitched a ride with another cab company that saw us waiting one too many times. We were late for our reservations at Melting Pot but they took us in anyway. Food was good as always. Afterwards we were tired and full and just wanted to go to bed (does that make us old?).

All in all it was a great anniversary and I guess I'm glad I married the guy. LOL. He's my lobster!


Miss My Babies!!

I miss my babies. Two of them (the oldest deviants) are in Alabama with my Dad and stepmom. They are having a great time, swimming and playing, eating whatever they want and not missing me. Oh I ask if they miss me and of course they lie to me and tell me yes.



I will go down in a week or two to get them but in the mean time I am enjoying my one on one time with Hurrican Carley.
