This post is primarily for my sister and Mom but it's yummy for anyone who wants to add more veggies to their diet.
First cut up a head of cauliflower in to florets and put in a food processor. It should not be packed in but loosely.
Turn on food processor until cauliflower resembles broken pieces of rice.
Heat a good amount of oil in a skillet at medium heat. It should be enough to generously coat the entire pan.
I tilted it to the side to show you how much was in there.
Add processed cauliflower into oiled skillet. Season as desired. I use salt & pepper primarily. Cook over medium heat for 10 minutes stirring periodically.
After cooking 10 minutes taste it. Everyone has their own taste of doneness. It does tend to dull in color. Once done add green onions, parsley or cilantro for a little extra flavor.
